Dutch Oven Ratatouille

Prep time: 20 minutes

Cooking time: 35 minutes

Servings: 2

Ingredients:

3 tomatoes

1 eggplant

1 bell pepper

1 zucchini

2 garlic cloves

1 tablespoon fresh cilantro

1 tablespoon olive oil

½ teaspoon thyme

2 red onions, sliced

1 teaspoon salt

Directions:

Slice the tomatoes, eggplant, bell pepper, zucchini, and garlic cloves.

Mix up together the fresh cilantro, olive oil, thyme, and salt.

Then place all the vegetables that were listed above one by one in the Dutch oven.

Sprinkle the vegetables with the oil mixture and close the lid.

Cook the meal for 35 minutes at 360 F.

When Ratatouille is cooked – let it chill for 5 minutes and serve!
